I've just finished testing out another great product from Tropical Traditions.  This time, it was the Organic Shredded Coconut.

I have absolutely loved it!  Unlike most baking coconut, this is finely shredded.  Rather than long stands, but very small cut, like this.

It is also unsweetened making it great for cooking.  Here are the details:
Tropical Traditions 100% natural Shredded Coconut, Coconut Flakes, and Coconut Chips are made from organic dried coconuts in the Philippines that are grown with no fertilizers or pesticides. This premium dried coconut contains no additives or preservatives, and is not sweetened. Unlike most dried coconut on the market, our dried coconut products are not treated with sulfites to keep them white. They are a great addition to recipes and baking, or just for snacks!
I really like this texture for cooking and baking. I have  also used it as a coating for truffles, for coconut chicken and shrimp, and sprinkled on chocolate frosting or ice cream.  I'm looking forward to trying out some more recipes from the extensive list on the website.

One recipe I made was No Bake Coconut Cocoa Chewy Bites.

I did change one thing, I used white chocolate instead of cocoa powder.  These were super easy, and finished in about 20 minutes start to finish.

I assembled the ingredients:

and measured them out:

Then I melted the coconut oil and butter together, and added the ingredients according to the recipe.

The end result looked like this:

Using a melon scoop I got the mixture to form a nice shape. (Don't try to roll them, it won't work!)

I dropped each one onto a cookie sheet lined with waxed paper, then they went into the fridge to cool.  After I took them out, I drizzled some milk chocolate over half of the batch.

They came out quite nicely, with a pleasant coconut taste,  a hint of honey and just enough white chocolate.  You'll see them below on the left.  On the right are some truffles rolled in shredded coconut.
