When my sister was diagnosed with Celiac-Sprue disease it was still the dark ages for gluten free food choices.  She had to prepare almost all of her food from scratch, and it was super expensive!  By the time all of the necessities were completed, she didn't have the energy to make baked goods for snacks.

When I received some Hail Merry Macaroons in the mail, I couldn't wait to share some with my sister.   As I mention in many posts, I love coconut.  (With a capital L!)  I'm also a huge fan of raw coconut oil.  But I was good, and waited.

When we finally had some of these amazing little cookies we were in love.  Made with shredded coconut and raw coconut oil, they began to melt as soon as our mouths warmed them.  The organic maple syrup and Madagascar bourbon vanilla added just the right sweetness.

Then we tried the chocolate ones.  Oh, my!  These were good!  Chocolaty, chewy and indulgent.

As I was tipping the bag over to get the last crumbs out, I noticed writing on the bottom of the bag.  It said that Hail Merry shares their time and their profits to help bring nutritious foods to the most vulnerable, including those challenged by autism.
