A few weeks ago, I tried Coconut Peanut Butter for the first time.

This is a very nice product offered from Tropical Traditions.  This all natural, certified organic peanut butter is made from two ingredients.  Coconut and Peanuts.  That's all.  No sweeteners, no binders, fillers, or preservatives.

I opened the box and could see the product through the glass jar.  I noticed that there was a layer of oil on the top, but I warmed it up a little bit and it blended together easily.  Once it was mixed, I tried a spoonful.  It was really quite good!  I enjoy natural coconut products like coconut cream and unsweetened coconut, and this spread has that distinct flavor.

This is not a sweet peanut butter - the true flavor of the ingredients is unadulterated.  The organic roasted peanuts and the premium organic dried coconut are ground together to make a delicious and nutritious spread.

I have been using it as is - on bread, by the spoonful, and with chocolate.  It can absolutely be used for baking, too.  The Tropical Traditions website has a nice selection of recipes that are made with this product, and many are gluten free, like these No Flour, Coconut Peanut Butter Cookies.  (don't they look wonderful?)
