Quick and Easy Mini Quiche (or Breakfast Casserole)

Quick and Easy Mini Quiche

This is a recipe I like to make for breakfast or brunch buffets.  It is very easy and is ready in less than an hour.  Rather than baking pie crusts, dry biscuit mix is stirred right in.

The recipe as written will serve six.  In the photos below I am making a tripled recipe, in case you're wondering why the photos don't match the words in the directions.

First:  Grease the muffin tins or the pan that you will be using to bake the quiche.  If you are going to add meat, prepare it before you begin.  If you would like some veggies, wash and prep them but chipping into small pieces.

Preheat the oven to 400 degrees Fahrenheit.

Then, assemble the ingredients:


You will need:

  • 2 eggs
  • 1 cup of milk
  • salt, pepper, and other seasoning to taste
  • 1/4 cup of biscuit mix
  • 1/2 cup of chopped vegetables
  • 1 cup of chopped ham, crumbled sausage, or bacon pieces
  • 1 cup of grated cheese
In a medium sized bowl, combine the milk, eggs, seasonings, and biscuit mix.


Next, add your chosen veggies and/or meat, along with the shredded cheese.  Now stir the mixture together, until it is all well mixed and covered.

Using a Tablespoon sized measuring spoon, fill the mini muffin tins about 3/4 full.


Allow them to bake for about 20 minutes, until the tops are browned and the centers are cooked through.



If you prefer an egg bake breakfast casserole, pour the mixture into a baking pan, and bake at 350 degrees for 35-40 minutes.
